I bought a Costco prime ribeye. I wanted, medium rare my roommate wanted medium well so I did it in the middle, perfect medium to me. Any advice on how to improve?
I used a relatively new cast iron, olive oil to cook then butter to baste. I seasoned the steak with salt and left it covered in the fridge for 4 hours (helps get a solid crust). I took it out, patted the salt off then reasoned with salt, black pepper and garlic powder. Let it sit for an hour at room temp then cooked it up. Made some rainbow carrots, mushroom and bell peppers as a side.

Great cook! There’s banding, but I’m sure the steaks were still delicious. Medium well with some prime beef is a waste! Select or choice will be fine for anything over medium.

You should’ve basted it with butter, 2 cloves crushed garlic and fresh rosemary. Omit the garlic salt. Promise, it’s next level.

Fresh ingredients are always far superior. Fresh garlic cloves and rosemary will take it to the next level. I’ve also started putting a cast iron skillet on top during my sear and it’s perfect.

Didn’t get smoked out from the olive oil? I prefer avocado for the higher smoke temp.

I’d use a different cooking oil like rapeseed, canola, or avocado But it looks like it turned out well

No need to leave it to get to room temp, that’s just a myth. Flip it more often so you get less of grey band, like every 30sec.
Looks great! Make a compound butter and put it on that baby when you’re just about finished cooking.
