We take our knives to our local Ace hardware every other year for a tune up. And of course I have a sharpening tool in the knife block that I use before most cuts. No excuse for dull knives! Oh the steak looks deelish!

There’s always room for improvement. Unfortunately, your sear is weak, and the temp color is medium yet the fat is not rendered. Heat was too low.
Also, for an expensive Miyabi carbide steel knife, Iron Chef Morimoto would cry for keeping it so dull.
