I know this recipe isn't really Mediterranean diet but it's supposed to be heart healthy.

I use lite coconut milk because I know coconut milk is heavy in bad fats.

So I know this isn't quite the Mediterranean diet but I'm trying to get closer to it how bad would this be to eat a couple times a week?

    Probably better than meat likely worse than Olive oil

    Personally I wouldn’t make that ever… adding peanut butter, peanuts and sweet chilli? That’s such a weird variation on what someone would consider Thai. Using lite coconut milk is fine, just might be a bit more watery… you can combine the heavier coconut milk with broth or make a dry curry as well.

    I have found using unsweetened soy milk makes the dish just as creamy!
