  5. The process…

    First I dried the steak well with a paper towel and seasoned it liberally with salt/pepper. I put it back in the fridge for three hours and then let it come up to room temperature. I got my stainless steel skillet ripping hot and oiled it liberally with avocado oil. Then I firmly placed the steak in the pan, assuring as much service area had good contact with the pan. I let it seat until the steak released from the pan and repeated with the other side. Once that side released, I flipped the steak every 10-15 seconds until it reached 120 degrees at which point I pulled it and let it rest for 10 minutes.

    I washed/sliced the mushrooms and coated a medium high heat non-stick pan with truffle oil. I added the mushrooms and seasoned with salt and pepper. Once they got the color I wanted, I added butter and let them cook down about another 5 minutes. Then I turned the heat up to high and added about a tablespoon of balsamic vinegar. I swirled the mushrooms around in the balsamic until it caramelized.
