All prepped seared and eaten inside of my truck. Prime grade new york strip 9$ from walmart. I dry brine 24 hrs. SPG cast iron sear rest for 10 minutes and add a dab of Kerry gold unsalted. I totally smoked the guy out next to me in the parking lot searing this one lol. I was aiming for the exact crust I got but a med rare. I went slightly beyond that. I'm thinking I probably hit medrare when I pulled off then during resting it cooked a bit more. It was a steak and anime kind of night for me and more people need to know about it. lol

Out of curiosity, what’s your cooking setup like while you’re out on the road?

I’m not a giant fan of steak like this but everyone has a preference. I’d say it looks great for a “medium” to “medium-well” steak. I prefer my steak to be “rare” just for reference. Happy birthday though ! 😉

A bit overdone like u said but otherwise great job. Techniques are on point as well. A friend of mine was raving about dry brine and I can’t wait to try it again. Last time I did it I used fine table salt and that was a huge mistake lol.

    Enjoy!
