Cristal Bun demonstration in our Kaak Technology Center. Other names for this type of bread are Glass Bread or Pan de Cristal. Glass Bread originating from the Catalan region of Spain has been steadily gaining popularity in Europe year after year.

Pan de Cristal has several unique characteristics that set it apart:
• Commonly sourdough is part of the recipe
• The crumb has an open structure therefore referring to ‘glass’:
o High hydration level of the dough (75-90%)
o Dough resting after mixing is part of the production process
• The crust structure is generally thin and crusty
• Various product shapes possible

From midsize to industrial bakeries this production line can be designed to fulfill production capacities between 1.000 and 10.000 kg per hour (2,205 to 22,050 lbs per hour). The soft dough sheeting line offers exceptional flexibility, allowing bakeries to expand their bread production. This solution maintains as much of the developed product structure as possible, and minimizes stress in the dough.
