Do you find the cheesecake filling softens your cookies over time, weakening its integrity? I use cheesecake fillings or a flavored variant of cheesecake filling in so many of my cookies and I’ve found that for the best results to get long-lasting cookies that stay soft and moist without getting weak and delicate, I like to mix all my cheesecake ingredients in a double boiler slowly heating it up until it holds a steady 140°, so that it gets rid of some of the water. (Cream cheese actually has a higher water content than butter!)
Anyway, these cookies look awesome and sound tasty!
