Experimented with proofing location (moved it to my baby's room upstairs, where it's hotter) and hydration (decreased by 5% to 70%). The dough was much easier to shape and I got the height I wanted! Had a really flat loaf the other day and I've been baking ever since out of stubbornness 😆
