These will work, but will make yaki udon and not yakisoba. The buckwheat noodles you bought are not the kind you use to make yakisoba and the udon noodles will yield a much better result.

You’d usually use more of a thin, almost ramen-style noodle. Those are udon. They are still delicious. Yakiudon is even tastier than yakisoba imo.
For actual yakisoba, the most common brand I find in US shops (some regular grocery stores, most Asian ones) is maruchan ([they look like this](https://asian-veggies.com/products/fresh-yakisoba-noodles-with-seasoning-sauce-maruchan-16-93-oz))

Those are upon, yakisoba is more like angel hair pasta.
Those aren’t soba dude. It literally says udon on the package
Wtong noodles but Yaki Udon is still fantastic.
