    Fresh jalapeño and pep. This is one of the best pizzas you can eat. Something about the oils from both the pep and the jalapeño. kudos.

    Last wood fired pizza I had, I asked if they had fresh or pickled jalapeño. multiple choice, an easy Q hard to get wrong. All 3 people working didn’t know what pickled jalapeños were but they came in a can and look like “this”.

    We’re cooked.

    Joking aside, this eqs an experiment dough, and have no notes on it….3 different flours, non measured yeast, like a couple pinches, maybe a tablespoon of salt??? I’m just trying to learn this new oven, dough be damned. Guessing close to 65% hydration
