Penn State Extension has this to say about the old jars that use the glass lids and rubber gaskets:
**Jars with wire bales or rubber rings used with glass or zinc lids should be used for storage only.**
Everything about this picture make me nervous. From a safety standpoint, I would not eat anything from those jars.

Sorry, we don’t use them. Not all old things are good. In this case, modern canning jars and lids are far safer–the ones you have are not safe for canning.

Cold pack and refrigerate only. Consume within three months with appropriate acid levels. I would not can with those lids.
