Someone I was cooking it for didn't like tomatoes. So both sides have fresh rosemary and slices of garlic with dried basil. The left side had some sun dried tomato pesto I found in the fridge.

It was soft and very spongy. 80% hydration. Fridge overnight, lift and fold for 5 minutes before going in the fridge then sat in the oven with the light on for most of the day

    For a sec there I thought you had put nduja on your focaccia and thought “what is this absolute maniac doing???”. And then I saw that it was sundried tomatoes. But now I want to make nduja focaccia…
