Has anyone canned peppers without pickling? I usually test drive recipes but it’s a pia to get out the pressure canner for a quarter pint. Do they taste ok? Would be using for jalapeño corn bread, etc. photo is from

    I (pressure) can plain peppers – they’re a bit softer than store-bought canned peppers, but do dice up pretty well.

    We can about a case every year when the Hatch chilis show up in the stores. Roast, peel and dice, then pressure can in 1/4 pints. They turn out better than store bought
