How’s it look? Pulled it off after searing, let it rest in the smoke until it hit 132°, then wrapped it in foil for a proper 15-minute rest. Second pic shows the makeshift muffin smoker I rigged up. No inside shot—couldn’t wait, I’m sure you can relate. Cheers.
