This is, let’s say, a variation of a recipe from Tuscany that involves Pici, which i unfortunately wasn’t able to get and the only pasta fresca i had was fusilli avellinesi.

    Steps:
    1. take a number of sausages equal to the number of people eating and make them into tiny pieces, all the while boiling the water

    2. put pasta into the water (salted of course) and start roasting the pieces of sausage adding a spoon of olive oil to their pan

    3. when the pasta is almost ready, take some cooking cream, put it in a separate pan and mix it with a dose of zafferano

    4. once you’ve mixed the cream and the pasta is ready, put the sausage pieces in the same pan of the cream and mix it all for a few seconds all the while heating them

    5. after that, put the pasta in that same pan and mix it with everything else while keeping the heating to a minimum

    6. enjoy 🙂

It can be noted that you could also create a Fonduta with the cream and zafferano by adding to the mix some parmigiano.

Hey that looks delicious! Also funny because I started making fusilli avellinesi yesterday (my friend call it fusilli al ferretto). [here is a video](https://imgur.com/a/hRFTYrS)
