West African Tofu Peanut Stew – I absolutely love this recipe! Even though its still crazy hot outside, summer is officially over and I am so ready for soup season! This stew is creamy, healthy, and so delicious! Perfect for a rainy weekend or a cold winter night.

* salt
Stew
* coconut oil
* yellow onion
* jalapeno
* garlic
* ginger
* cumin
* cinnamon
* harissa paste or red pepper flakes
* tomato paste
* vegetable broth
* sweet potatoes
* peanut butter
* can of diced tomatoes
* collard greens
* lime juice
Serve with

This sounds *really good*! I can’t say I’ve ever had West African food, so I eagerly look forward to this. I’ll just have to make one modification of swapping coconut oil, as I’m allergic to it.
