    That’s rare, not medium rare, but it still looks delicious. Some people would even argue that for a picanha, rare is better than medium rare! I’d definitely eat this if I had the chance.

    Picanha is a hard steak to cook. I cook mine with medium heat usually a propane grill and when the fat starts to drip I’ll let the fire sear it some more. (Well) there’s steps, I first sear one side and then flip it, then I cook it on the fat side, so like three sides and at the end I let the fire flare up. I’ve got my experience now and usually gauge the inside on touch, that’ll just take time with the more you do it. But yeah, the inside looks a little raw to me. Keep at it!

    I like to set an oven at like 250 and after I get my crust I’ll pop it in for a couple minutes then rest it for another 10ish minutes especially with a cut like this! Low and slow

  7. You didn’t mention your cooking method, but my guess is you need to go lower and slower.

  8. Picanha needs to sit for 10 minutes before serving. It will continue cooking and should solve the raw issue

    In my not professional opinion. The steak was cooked while the center was still very cold or maybe even frozen. That’s the only time I ever get such a dark red center. Personally I love steak this rare, but if you’re looking for a more even cook, I’d let the steak rest out of the fridge for a bit before putting it on. That being said, it still looks great

    MR on the edges rare in the middle. Was this steak refrigerated right before cooking it? I see this mostly in freezer/fridge steaks that weren’t brought up to room temp before cooking
