Baked eggplant w basil & spices I kind of just threw together with flavors I like (425 degrees, 20 mins, cubed, evoo) & air fried pressed tofu (cubed) w evoo, topped with evoo sautéed onion, poblano, and 1 tomato, tahini sauce (just tahini & lemon juice), fresh parsley, & golden raspberries

Best part?! The eggplant, tomato, onion, poblanos, parsley, basil, and raspberries were just picked from the garden yesterday 💕

The garden always makes me feel like I can “cook” 🤭 love this time of year!
