No joke – never liked them. Then I watched Mindhunter and serial killer Ed Kemper insisted that Holden have an egg salad sandwich from the commissary. High as shit, I saw him eat it and was like, huh, that actually does look kinda good. Now I enjoy them quite a bit.
For as many lives as Ed Kemper ruined, he gave me an appreciation for egg salad sandwiches.

In the 1970s my mom made two types of sandwiches on family outings. Both on Wonder Bread. A bologna and American cheese with Mustard, and Egg Salad Sandwiches. Egg salad was my go-to every single time.

(Edit) And more than a few years before THAT my favorite order from my campus sandwich shop was egg salad / bacon / cheddar!

I love egg salad but not a huge fan of pickle relish in it. Maybe a little diced onion but otherwise just the mashed up egg with Mayo and s&p. I’ll have to try adding mustard and paprika; sounds amazing!

I made a few batches of egg salad lately. I’ve made ‘regular” and for some batches I’ve added a half an avocado and a spoonful of cottage cheese. Really good,
