Tried my hand at reverse searing a Costco NY strip
Cooked indirect at 250 until internal temp about 125, pulled, rested/cooled and dried the steaks off. Fired up the chimney with fresh coals and put a small grate over the chimney and seared them individually for a few minutes total.
Tasted great. Was aiming for medium. Seasoned only with salt and pepper. Slight grey band but overall happy with the outcome.

Looks great. To fine tune, maybe go to 120 max on the precook and a little hotter sear for shorter periods like 1 minute total per side but flip every 30 seconds. You’ll end up with almost zero banding and finish temp leaning medium after a 10 minute rest
