OP Why this cooking method? Portioning your tofu into “steaks” and then doing either a rub or marinade, then searing them on a grill or roasting them, would give you a more enjoyable result with a more uniform flavor profile and mouth feel. This just seems like a meat-style application being applied to tofu, which will obvi cook differently than a meat would.
