Ingredients (serves 2 not terribly hungry people):

  • 1 cucumber
  • 8 oz cherry tomatoes
  • 2 oz kalamata olives
  • 2 oz Greek feta
  • 1/4 red onion
  • Quinoa

Dressing:

  • 3 tbs EVOO
  • 1 tbs red wine vinegar
  • 1/2 tsp oregano
  • salt, black pepper, and lemon juice to taste
