I made some the other day, and I happened to also make whipped cream for our waffle breakfast for dinner, so I used the remaining whipped cream and cookies and made some homemade “ice cream” sandwiches 😂

Crunchy or soft? I like em soft, but crunchy ones are tied to memories of my grandfather, whom I miss very much. He preferred a crunchy cookie. So that’s what I got when I visited.

Same. 😊 I shake it up now and then by making them like banana bread or use pumpkin to make them cakey and soft. But the base recipes remains the same and the best. My Grandmas gingerbread men recipe is a close second for me though. She always added a secret ingredient to the icing that takes them from a ten right up to the moon. 🤤
