β’ Extra virgin olive oil
β’ 350 ml tomato puree (about 11/2 cups)
β’ Fresh basil leaves
β’ 2 l lamb or sheep broth, or salted water (about 8 1/2 cups)
β’ 8 sheets Pane Carasau
β’ Pecorino cheese
β’ 1 egg
β’ Salt to taste
INSTRUCTIONSπ»
Make a tomato sauce with onion, olive oil, tomato puree, salt and basil.
Boil sheep meat broth and immerse carasau bread sheets to soften them.
Layer the soft carasau bread with the tomato sauce and Sardinian pecorino cheese in 3β4 layers.
Poach an egg in the simmering broth and place it on top of the layered bread.
Sprinkle with more pecorino cheese and the pane frattau is ready to be served.
