Eggplant Rollatini Recipe
Serves: 2
Prep Time: 30 Minutes
Cook Time: 20 Minutes
Ready In: 50 Minutes

Ingredients:
1/2 Eggplant
Tomato Sauce
8-10 slices of Mozzarella
Grated Parmigiano Reggiano
Extra virgin olive oil
Salt & Pepper

Directions:
1. Preheat the oven to 360°.

2. Peel the eggplant and slice lengthwise – about 1/4 inch thick.

3. Line a baking sheet with parchment paper and generously oil. Then lay the eggplant slices on top in a single layer.

4. Using a pastry brush, brush the top of each slice with additional extra virgin olive oil (see Tips below).

5. Sprinkle with salt and pepper then place in the oven to roast for 20 minutes.

6. When finished roasting, top each slice with tomato sauce and mozzarella cheese then roll up starting at the small end. Be sure to tuck the flap underneath so they don’t unroll.

7. Once they are all rolled up, top each one with a little extra tomato sauce and then sprinkle with the freshly grated parmigiano reggiano cheese.

8. Place back in the oven and bake for an additional 15-20 minutes or until the cheese melts.

9. Buon Appetito!

Tips: Make slicing the eggplant easier by using a mandolin. This will also ensure uniform slices that will roast evenly.

Remember eggplants are porous so when brushing the EVOO, do each one individually keeping a swirling motion with the pastry brush while slowly drizzling the olive oil.
