Gnocchi Alla Sorrentina is an irresistible Italian dish made with soft potato Gnocchi paired with a rich and delicious tomato and mozzarella sauce. For the ultimate indulgence, it’s better to make Gnocchi from scratch- like in this video- and don’t worry, if you have cravings for it during busy weeknights, you can assemble it in a pan -whenever you have time for it- and bake it a few days later. Of course, using store-bought Gnocchi is another option, if you’re in a pinch, but making it yourself at home is really worth a little more time and effort.
Tip: If you’re gluten-intolerant, make potato dough with 1 kg potatoes, 2 eggs and about 400 g rice flour.

Ingredients:
For the gnocchi:
• 1.200 k potatoes
• 1 egg
• 300 g flour (approximately)
• Salt & pepper
• Nutmeg (a little)- Optional
• Durum wheat flour or semolina (as much as needed)
For the Sauce:
• 6 tbsp. extra virgin olive oil
• 1 clove garlic
• A heaping spoon tomato paste
• 700 g tomato puree (or tomato pulp)
• Salt & pepper
• 1 level tsp. sugar
• Basil leaves

For assembling:
• 375 g Mozzarella
• 60 g grated Grana or Parmesan
