this method of cooking will create a lot of polycyclic aromatic hydrocarbons… Many of them are likely carcinogens. The idea of the vertical grill was invented to overcome this issue.
Essentially when grease from meat splatters into flame it explodes and creates a lot of complex molecules that can be harmful to human health. Those molecules are then spray painted back onto the surface of the meat and then eaten.
