Made much like a pasta Al olio
Spaghetti and salted water on boil
Second pan:
Healthy glug of olive oil on medium high heat
7 large cloves of garlic sliced
A few dashes red pepper flakes
Simmer till garlic fragrant and golden
Add 1 1/2 cups cherry tomatoes halved
Once pasta starts to soften, remove pasta from water and add to the second pan with 2 cups of pasta water ( I like to leave it boiling on high to reduce and saturate the starchiness of the remaining pasta water)
Add pasta to saucepan raise the temperature, and allow the tomatoes to cook into it. Once the sauce starts to thicken, slowly stir in 1 cup of grated pecorino and starchy pasta water. Add fresh pepper and 1 cup of chopped basil. Plate.enjoy.
