*****Malva pudding recipe *****

Ingredients

• For the pudding

• 360 g sugar (1 1/2 cups)

• 4 large eggs

• 2 tablespoon apricot jam

• 300g flour (1 1/4 cups)

• 2 tsp baking soda

• 1 1/2 tsp baking powder

• 2 Tbsp salted butter (a generous tablespoons)

• 2 teaspoon vinegar

• 158ml milk (2/3 cup)

For the sauce

• 250ml fresh cream

• 150g butter

• 150g sugar (I didn’t want the sauce to be too sweet)

• 125ml hot water

• 2 tps vanilla essence

Instructions:
1. Preheat your oven at 170°c
2. In a electric stand mixer, beat the sugar & eggs until it becomes like a lemon colour then add the jam & mix well.
3. Melt the butter & add the butter and vinegar to the wet mixture.
4. Sift the flour, baking powder & soda to the wet mixture & mix well.
5. Grease your baking dish with butter, then transfer the batter into the dish.
6. Bake until pudding is brown and well-risen — depending on your oven & oven dish, this will be between 30 – 40 minutes.
7. While the pudding is baking, prepare the sauce.
• In a pot, melt together the ingredients for the sauce, and stir well.
8. Pour it over the pudding as soon as it comes out of the oven.
9. Leave to stand awhile before serving. Serve warm. Because it’s rich, it does not really need enhancement, but if you want, serve with custard or vanilla ice cream.

  1. Perfect timing, I'm making malva pudding and custard for an event tomorrow. I'm going to follow this recipe, can it be doubled?? I'm making it for 70 people.
