    The one at the top looks slightly bigger with a better cap, I’m going with that one.

    The bottom one has the most cap and the complexus. That one is the one butchers will go for because the grill dad’s go for the top one thinking it has a bigger cap.

  3. shoulder end all day long, more flavour and while both will be tender the bottom one has a nicer texture typically.

  4. Bottom one. Better cap of course but also you can see a slope in the top one.. they cut a door stopper w that one.
