    Looks great! Isn’t that cut with the grain though? Some of the pieces definitely appear to be. I saw tou say it was chewy, that may be why!

    Personally, I feel that chuck is the absolute finest cut to cook on a grill. Especially a charcoal grill. All that fat just melts into the meat resulting in a truly wonderful flavor. And being a chuck steak, it’s undervalued by the general public.

    You say poor man’s ribeye, I say it’s one of the unsung hero cuts. Chuck steak is 6th man off the bench putting in the quiet but consistent clutch performance in the playoffs. Looks delicious 🤤
