Got to try some Levadura de Olla dishes at CDMX this past week. They’re from Oxaca, I’ve wanted to try their food for a while now but haven’t gone to their restaurant yet. Everything was amazing and I can’t wait to go to their restaurant.

  1. Tomato and herb variety. Good fresh tomatoes, this was their least impressive dish but still a good start.

  2. Tamale with 2 moles. I’m mexican and this tamale is probably on my top 3 ever, I would even say #1 but memory can be tricky.

  3. Pork with a base of corn (made using a special process) and salsa verde, and an enfrijolada on top (fried tortilla and black bean sauce).

Familiar flavors I’ve grown up with but cooked with much care, top ingredients. Delicious and balanced. Judging by what I’ve tasted I can’t wait to try Levadura de Olla in Oxaca.
