Recipie:
500g organic bread flour 100g starter 325g water (room temperature) 10g salt
1.) mix water and starter and then add in the flour. Mix until a dough forms. Let it rest for 30 mins
2.) sprinkle the salt on top and work it into the dough by folding a few times. Also perform the first round of folding, going 3 times around the bowl. Repeat every 30-45 mins for 2-3 hours or until the dough passes the “windowpane test”
3.) place the dough in the fridge overnight to ferment
4.) the next morning, preheat oven to 475 and heat up the dutch oven inside the oven at temperature for at least 30 mins.
5.) while the oven is preheating, take out the dough and shape it into a boule on a lightly floured surface
6.) score the dough and place it in the dutch oven with the lid closed and bake for 20 mins
7.) remove the lid and bake for another 20 mins or until it’s a golden brown color
