.. For some of it, the batter isn’t fully cooked on the inside. Frying it longer might overcook it. Would love to know the proportions you guys use for the batter.

    If you find your batter browning too much before it’s fully cooked, you’re probably frying with way too high heat.

    Real Korean friend chicken has a low temp fry to solidify everything and then a high temp fry to make it crispy
