In this video, I’ll guide you through every divine step of creating amazing cannoli- from shells to cream- they will be the best cannoli you or your friends and family ever ate!

CANNOLI SHELLS:
3 TBS vegetable shortening
2 cups flour
2 TBS granulated sugar
1/2 tsp cinnamon – or more to taste
1/4 c marsala wine- plus more if necessary
1 egg slightly beaten

Beaten egg white for sealing
vegetable oil for frying- I use sunflower – use a very mild tasting oil
Cut shortening into flour to resemble coarse crumbs. Fold in sugar and cinnamon. Add 1/4 c marsala wine. add beaten egg. Add more wine until dough comes together – not sticky just holding together. Let dough rest 1-2 hours in refrigerator or cool place. cut pieces of dough small enough to manage and use pasta machine to roll to second to last thinnest setting. cut ovals out of dough and form around cannoli forms. seal overlapping edges together with a little beaten egg white. Heat oil to 400F. Fry cannoli shells until they are medium brown – they will darken when they come out of fryer. drain on paper towels and carefully pull off tubes while still warm so they don’t stick. Store cooled shells in tins lined with paper towels and store in a cool dry place for up to 3 months they will get better as they sit.

CANNOLI CREAM
2 lbs drained ricotta
2 cups powdered sugar
2 teaspoons vanilla extract
*** I would gradually add sugar and increase or decrease according to your taste- the cheese can be quite sweet already may not need to add a lot of powdered sugar- please do not omit sugar the cheese needs it to thicken***
add to cream if desired candied fruit like Sicilian style, mini chocolate chips, or to ends chopped pistachios, chocolate chips, more candied fruit, or whatever you would like to try!
