DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.

Fried Tenderized Pork (This recipe is in our Vol. 1 Cookbook: https://collard-valley-cooks-store.myshopify.com/collections/all
1/4″ THICK TENDERIZED PORK CHOPS (THIN PIECES MECHANICALLY TENDERIZED)
1 1/2 CUPS SELF-RISING FLOUR
2 EGGS (ROOM TEMP.)
WEBER STEAK-N-CHOP
BLACK PEPPER
SALT
CORN OIL OR VEGETABLE OIL FOR FRYING
Place flour in a shallow dish or pie plate. Preheat a large skillet. Place eggs in a shallow dish or pie plate and whisk well. Sprinkle one side of chops well with steak-n-chop, pepper, & salt. Now place each chop in egg and then into flour. Press flour into chops on both sides making a good crust. Let pork sit 10 minutes before frying. This will help the crust stay on better. Add oil 1/2″ deep to hot skillet. Oil must be hot before adding pork. Fry first side 3 minutes on medium/high. Flip them and fry 2 minutes on last side. You may have to turn heat down slightly to prevent chops from getting too brown. Use drippings and make our white gravy recipe on page 34. Serve gravy over chops. Tip: Pork chops should reach a minimum of 150degrees internal temperature.

I ordered one of those needle tenderizer hand presses off of Amazon for like $13 and went on both sides of cube steak in both directions and it literally was the best I ever made.Its like a hand held press of small knife blades and it is amazing and easy to clean.You can use it on anything.I could never find cubed beef that had been tenderized enough and this fixes that.

  12. Tammy, I made biscuits using coconut grease and heavy cream this morning. That coconut grease is the bomb – but I got the ratio of grease to flour too high. Next time I'm gonna try buttermilk instead of cream. Experimenting is fun and they're good enough I don't haf'ta feed em to the chickens.

  14. The most stressful part of cooking for me is trying to cook entire meals at one time. I’m so terrible at it! I don’t multitask well. I haven’t mastered getting everything done at the same time, keeping it all warm, etc. You amaze me with how quick you are!

  17. My hand mixer splatters everything EVERYWHERE!!!! I am currently planning to donate it to a thrift shop! I started using my immersion blender and I’m telling you!!! It is a game changer for me!!! Such smooth and creamy creamed potatoes!!!!😊

  18. Tammy did you call those creamed potatoes? They look like mashed potatoes to me.. but people make different things I know.
    One of my favorite things my precious Mother made when we were growing up, were her creamed potatoes. She would peel and cut the potatoes up, boil them but not all the way soft (like one would for mashed) she would drain all that starchy water off and then add butter, milk, S & P. she would put flour in a little bit of cold milk, whisk and then pour over the potatoes . a little parsley is good too. Your supper looks good. I forgot to say HELLO to the in laws.. & HAPPY Anniversary!!

  19. Hi! To keep potatoes from developing a gluey texture, rise the starch from them before and after cooking. Warm the butter and milk before adding. Avoiding a white or red potato helps too. I use nothing but golden potato’s , butter, salt and pepper. With the golden potatoes you don’t need any cream or milk.
