Want to preserve some of the best flavors of summer to savor during the long months ahead? Make this delicious caponata with all those extra eggplants, tomatoes, and peppers. Of course you can absolutely eat it right away, but why not tuck some in the freezer or can it? I’m opting to pressure can mine because I am unsure of the acidity. There are recipes out there for water bath canning, but I’m not recommending those for this recipe.
