In collaboration with Daniel Williams, we’re bringing you a Jerk Chicken and Rice recipe infused with the spirit of Bob Marley’s music and vibrant flavors of Jamaica. Discover the full recipe below!

INSTRUCTIONS:
For the Jerk Marinade:
Combine two chopped shallots, 4-6 chopped scallions, squeezed juice of orange and limes, 3 Habanero peppers, 8-10 garlic cloves, and 4 Thyme springs in a food processor / blender.
Add 1-3 tbsp of browning sauce or brown sugar, 2 tsp nutmeg, 1/4 cup of vinegar, 1/4 cup of soy sauce. Season with salt and pepper. Add 1-2 tbsp honey 1 tbsp chili powder, 1-2 tbsp cumin, 3 Bay leaves.
Blend marinade and save half for later. Pour remaining marinade on chicken. Cover and let rest in fridge for at least 12 hrs, ideally 24 hrs.

For the Rice:
Make a simmering pot of peas (kidney beans). Slice a small amount of ginger and smash 3 garlic cloves. Add Ginger, Garlic, Thyme spring, 1 Scallion, and 1 Habanero into simmering pot.
Add 1 can of Coconut Milk or Coconut Cream.
Season with Salt, Pepper, and Bob Marley One Heart Jamaican Blend Chili Powder.
Wash and add your rice to the pot.
Stir and bring up to a boil for 5-10 minutes. Then on low heat, cover for 35-40 mins.
When ready, fork your rice to allow steam to be released.

For the Chicken:
Soak pimento wood chips or applewood in water. This must be done when the coals are at their hottest point to bring smoke flavor to chicken.
Place chicken on grill with chicken skin side down. Wait 20 minutes before flipping chicken on other side for another 15 minutes of grill time.
While chicken is cooking, add leftover jerk marinade to a medium high heat pot. Mix and add 2 tbsp of butter.
Brush the jerk sauce on both sides of the chicken.
Remove chicken from grill and chop into small pieces.
Serve on a large plate with the rice first and slices of chicken over the top.
