* Two barley rusks
* One big tomato
* 50 gr. of vegan white cheese
* 50 gr. of olives (cut in slices)

1. Soak the rusks in the water for some seconds, so that you can eat them.
2. Cut the tomato in half. Grate half of the tomato, dice the other half.
3. Salt the tomato before putting the cheese on the top.

Dakos is a traditional Cretan food. The basis for the food are barley rusks. Through the years, many different variations of rusks have been created in different shapes and mixture. These rusks have been created for practical reasons, as in the past, housewives did not have the time to make bread each day, while not also having the financial resources to buy fresh bread on a daily basis (especially white bread, which was too expensive). The ingredients are specific, which have been listed above. However, more ingredients have been added in different restaurants or taverns, such as caper, ground pepper, or parsley. The cheese that is used in the traditional recipe is always white, usually feta cheese, but many other local white alternatives are also possible, such as myzithra or manouri. The cheese must always be soft white cheese.
