Has anyone else noticed inconsistency in jars of lao gan ma?
Sometimes when I'm standing eating it off a spoon it just hits different.
Also anyone else here got IBS?

I’m just guessing, but pretty much everyone will eventually have a gastro problem if they’re eating teaspoons at a time of chiles and oil.

Sometimes it clogs the straw sometimes not so much.

I’ve noticed some batches aren’t as crispy which can be a bummer, but nothing like what you’re talking about.

I don’t need my spicy stuff to be so hot that I can’t stand it but j bought a jar of this and it just tastes earthy. No spice.

Perhaps you’re already doing this but you have to mix it from the bottom of the jar. I find all the tasty salt/MSG tends to fall towards the bottom so you need to mix it for consistent yumminess 🙂

I find the biggest variance is salt content. Sometimes they taste fine sometimes I need to add a bit of salt and mix to get the flavor profile where I like it. I’ve never had a jar that struck me as spicy though
