    What kinda pasta? Semolina 100%? 50/50 mix? What device are you using to get nice shapes?

    Kosher salt

    1 medium onion

    4 garlic cloves

    4 oz. Parmesan cheese

    2 Tbsp. extra-virgin olive oil, plus more for drizzling

    1 (4.5-oz.) tube double-concentrated tomato paste

    ½ tsp. crushed red pepper flakes

    2 oz. (¼ cup) vodka

    ¾ cup heavy cream

    1 lb. rigatoni (I used boxed)

    Basil leaves (for serving – optional)
