okay strap in i’m about to get wordy.

pictured above is what a normal meal-prep cycle will look like for me. i have pre-portioned proteins (2.5lbs ground beef, 6x5oz salmon filets, and 6 chicken thighs). i use these when i make dinner because i cook fresh every night, i only meal prep breakfast and lunch.

this time i made:

breakfast sandwiches (x6)

breakfast burritos (x15)

italian sandwich flatbread pockets (x9)

-autumn squash soup (x idek how much, over 5 quarts)

-sliced blocks of cheese for snacks with crackers/veggies

disclaimer: your issues may be different than mine! i have the “if i don’t have something ready right this second i will simply not eat” kind so all of this is in the freezer and available whenever, in addition to things like applesauce pouches, granola bars, a protein shake, cereal, ramen, etc.

further disclaimer: i’m recovering from an ED so i don’t track macros or anything because i fear that would send me back so instead i focus on “fed” and “balanced” and “mostly not shit for me”. i tried to be specific in the recipes but even the brands you use can change the macros by a large margin so it’ll likely change if you decide to make your own

    Breakfast Burritos: makes ~15

    INGREDIENTS:

    ◦ 2 medium sweet potatoes

    ◦ 2 large or 4 smallish russet potatoes

    ◦ 2tbsp neutral oil

    ◦ spices of choice, salt and pepper

    ◦ 24 eggs

    ◦ 4tbsp butter

    ◦ guacamole

    ◦ salsa

    ◦ sour cream

    ◦ sausage of choice (i used jimmy dean precooked turkey sausage crumbles for convenience this time)

    ◦ shredded cheese

    ◦ tortilla of choice (i use la banderita larger size)

    METHOD:

    -preheat oven to 400°F or 204°C

    -dice both sweet and regular potatoes and place in large bowl

    -coat with 2tbsp neutral oil and season to preference (i use chili powder, cayenne, blackened seasoning, cumin, oregano, salt, and pepper)

    -bake at 400°F (204°C) on a rimmed baking sheet for around 45 minutes, flipping midway

    -while the potatoes are in the oven, beat 24 eggs and preheat a deep skillet over medium-low heat with the 4tbsp butter

    -once skillet is warm and the butter is melted, add the beaten egg mixture and scramble eggs until desired doneness (i undercook mine slightly so they survive the microwave later)

    -if using fresh sausage, cook according to directions and allow to cool

    -once eggs are cooked, remove to a separate shallow dish to cool quickly

    -remove potatoes from oven, allow to cool

    ASSEMBLY: (ASSEMBLE WHEN ALL INGREDIENTS ARE COOL, DO NOT WRAP HOT THE TEXTURE WILL BE VERY BAD)

    -add ~1 tbsp guacamole to the tortilla and top with 1/3 cup potato mixture. add salsa and sour cream, then top with ~1/2 cup eggs, 1/4 cup sausage, and a sprinkle of shredded cheese. roll and wrap in aluminum foil

    REHEATING (BEST RESULTS)

    -thaw overnight in the fridge. remove foil and wrap in a paper towel and reheat 2 minutes on 5 power, and then 30 seconds on 8 power or until hot throughout.

    This is the kind of ADHD I have! Executive dysfunction! If I open the fridge and I don’t have something I can just stick into the microwave or eat cold I just close the refrigerator and say never mind, not eating!

    I also do a lot on the front end. I like organizing a budget and meal plan with time spent making sure I don’t have wasted ingredients. It’s fun for me. Then the boyfriend and I prep for a day, which we’ve gotten pretty good at, and I can eat that week. We plan for him to make some of his own meals since I can eat the same thing every single day and he can’t. I just have no bandwidth at the end of a work day to do anything besides putting my meal in the microwave.
