Did you ever have the Mexican lasagna Stouffers single serve? It used to be a guilty pleasure of mine and was so good. They don’t sell it anymore around here, and I don’t even think they make it anymore. I make italian lasagna every other month, I would say, and have always contemplated doing this instead once in a while, but I never have. This is exactly how I would do it, and the fritos make it even better! Good job.
