Sautéed spinach with garlic and spices, two eggs over easy, and golden beet humus with pita bread on the side. I’m slowly working on getting those carbs cut. If anyone has any suggestions of an easy way to prepare and store veggies, I’m all ears!

    Looks good. It’s a process to get it down at first. I now use a pizza cutter to cut my pitas or naan into 4 pieces. I eat one piece for each breakfast.

    When you buy the Lebanese flat breads open the pack and pull each piece apart like separating two plates. If they do t come part easy it’s not fresh but still ok.

    Fold each piece in half, return to the bag and then freeze.

    This way the bread stays fresh and lasts for a few days.

    When you are ready remove from the freezer just a few minutes before you eat , it doesn’t take long to defrost (5 minuitrs tops)

    It a lot nicer using just one side and obviously half the calories
