Baked Penne with Turkey

**Total Time:** 1 hr 10 mins
**Calories per Serving:** 816

#### Ingredients:
– 1 lb. penne pasta
– 1 Tbsp. extra-virgin olive oil
– 1 lb. ground turkey
– Kosher salt
– Freshly ground black pepper
– 1 small yellow onion, diced
– 3 cloves garlic, minced
– 1/4 cup tomato paste
– 1/2 cup chicken broth
– 1 (28-oz.) can crushed tomatoes
– 1 cup heavy cream
– 1/2 cup freshly grated Parmesan, divided
– 1/2 tsp. crushed red pepper flakes
– 8 oz. fresh mozzarella, sliced
– Fresh basil, for serving

Directions:

1. **Preheat Oven**: Set your oven to 375°F (190°C).

2. **Cook Pasta**: In a large pot of boiling salted water, cook the penne until almost al dente, about 2 minutes less than the package instructions. Drain and set aside.

3. **Prepare Turkey**: In a medium pot or large high-sided skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until it’s no longer pink (about 8 minutes). Drain excess grease if needed.

4. **Make Sauce**: Return the skillet to medium heat. Season the turkey with salt and pepper. Add the diced onion and cook until softened (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute). Stir in the tomato paste and cook until the meat is well-coated and the paste darkens (about 1 minute). Add the chicken broth and cook, scraping up any browned bits from the bottom of the pan, until slightly reduced (1-2 minutes).

5. **Simmer Sauce**: Add the crushed tomatoes, heavy cream, 1/4 cup of Parmesan, and red pepper flakes. Bring the mixture to a simmer, then reduce the heat and let it simmer until the pasta is ready, stirring occasionally.

6. **Combine Pasta and Sauce**: Add the drained pasta to the sauce and stir to coat evenly. Transfer the pasta mixture to a large baking dish.

7. **Bake**: Top the pasta with the remaining 1/4 cup of Parmesan and mozzarella slices. Bake in the preheated oven until the cheese is melted and bubbly (about 25 minutes).

8. **Serve**: Garnish with fresh basil and serve hot. Enjoy!
