as many as I can stuff on there before they start falling off. If i can fit too many then obviously I have a limit, but I’ve never reached it before my tower of chips tumbles like the Roman empire.

I only use Sour cream and onion chips as imo they are the absolute best for this recipe and I use as many as I can possibly fit

The rule of thumb is, the chips must raise the sandwich 1/8th inch (for flat chips), (1/4 inch for classic potato chips) and (1/2 inch for ruffles/ridged, and curlier chips up) to match sufficient “chip crunching degradation” ratio in order to compliment the rest of the material amount of a classic American sandwich.
The more materials you have on the sandwich you simply raise their respective ratios by 4ths of an inch, but none should exceed 1&1/2 inches unless the sandwich is either being transferred to larger bread types other than a classic loaf or if the finished product is a pressed sandwich.
