I combined 400g of frozen summer fruit, 3 tablespoons of sugar (or adjust as per your sweetness preference) & 1 tablespoon of lemon juice into a pot. Heat through, mashing it all up until it turns into a thick jam – you can add cornstarch slurry to thicken if needed.
For the crust & topping, I use around 3 cups of plain flour, pinch of salt, zest from one unwaxed lemon, 1tsp baking powder, half a cup of brown sugar & 225g unsalted butter cubed. Just whisk those together until itβs all crumbly. Use half the dough to press down into the pan for the crust, add the berry mixture then sprinkle the remaining crumb mixture on top. Bake for 40ish mins @ 190c (fan) until golden. An apple version with some cinnamon & ice cream/custard on top is just as nice.
