Grilled cheese with bacon jam

    Still not a 100% happy with my bacon jam recipe, it’s missing something, perhaps some heat. But here it is if you wanna give it a try:

    Ingredients

    * 280g Bacon
    * 100g Shallots
    * 100g Onion
    * 50g Maple syrup
    * 40g Brown sugar
    * 35g Apple cider vinegar
    * 15g Coffee
    * 5g Garlic (about one clove)

    Method

    1. Measure up all the ingredients
    2. Cut the bacon into 5mm/0.2inch squares
    3. Finely chop the garlic, shallots and onion
    4. Fry the bacon until crispy (about 10min)
    5. Take out the bacon from the pan but save the fat
    6. Cook the shallots and onion in the bacon fat on low heat for about 30min
    7. Add all the ingredients but the bacon. Let simmer on medium heat for 10 min
    8. Add the bacon and let simmer for 1min
    9. Pour the jam into a airtight container and eat straight away, or keep in fridge for ~2 weeks
