Linguine alla Puttanesca with Tuna

Ingredients:

400g (14 oz) linguine

2 tbsp olive oil

4 cloves garlic, finely chopped

6 anchovy fillets, chopped

1/2 tsp red pepper flakes (optional)

400g (14 oz) canned tomatoes, chopped

100g (3.5 oz) pitted black olives, halved

2 tbsp capers, rinsed and drained

Freshly ground black pepper

Fresh parsley, chopped (optional)

Instructions:

Cook the Linguine:

Bring a large pot of salted water to a boil.

Add the linguine and cook according to the package instructions until al dente.

Reserve about a cup of pasta cooking water, then drain the linguine.

Prepare the Sauce:

In a large skillet, heat the olive oil over medium heat.

Add the chopped garlic and tuna . Cook, stirring occasionally, until the garlic is fragrant and the tuna . dissolved, about 2-3 minutes.

Add the red pepper flakes (if using) and cook for another 30 seconds.

Add Tomatoes and Other Ingredients:

Stir in the chopped canned tomatoes, black olives, and capers.

Bring the mixture to a simmer and cook for about 10-15 minutes, until the sauce has thickened slightly.

Combine Pasta and Sauce:

Add the cooked linguine to the skillet with the sauce.

Toss well to coat the pasta with the sauce. If the sauce is too thick, add some of the reserved pasta cooking water a little at a time until you reach the desired consistency.

Season and Serve:

Season with freshly ground black pepper to taste.

Garnish with chopped fresh parsley, if desired.

Serve immediately.
