Ingredients:
FOR CAULIFLOWER FRITTERS:
1 small cauliflower
100g all-purpose flour
20g fresh parsley, chopped
1 white onion
2 eggs
1 tbsp ground cumin
1 tbsp turmeric
½ tsp Espelette pepper or ground chili
½ tsp baking powder
FOR PEA & SPINACH FRITTERS:
150g fresh baby spinach
300g frozen peas
Juice of 1 lemon
100g ricotta cheese or Philadelphia cream cheese
2 eggs
40g cornstarch
15g fresh parsley, chopped
15g basil, chopped
1 green chili
Salt and pepper to taste
FOR THE SAUCE:
300g sour cream
Juice of 1 lemon
A drizzle of extra virgin olive oil
1 tbsp tahini

Instructions:

Cauliflower Fritters:

Boil the cauliflower (cut into small pieces) for 8 minutes.
Finely chop half a red onion (brunoise) and place it in a bowl.
In another bowl, add the julienned basil and parsley.
Add the cream cheese, chopped parsley, and spinach to the basil bowl and mix well.
Mix cumin, turmeric, and chili powder into the bowl with onions and cilantro.
Squeeze half a lemon into each bowl.
Add the boiled cauliflower to the onion bowl, mash with a fork, and mix well.

Pea & Spinach Fritters:

In the other bowl, add thawed peas and mix.
Add 2 eggs to each bowl and stir until combined.
Add a bit of baking powder to both bowls.
Add cornstarch to the pea mixture and flour to the cauliflower mixture. Mix both well.
Fry spoonfuls of each mixture in hot oil until golden and drain on paper towels.

For the Sauce:

In a bowl, mix sour cream, tahini, lemon juice, and a drizzle of olive oil until smooth.
Presentation:
Serve the crispy fritters on a plate and drizzle generously with the tangy sauce. Perfect for a snack or as a light meal!
